Our small olive orchard situated on the west side of Paso Robles, California, includes a mixture of Tuscan and Spanish varieties which we blend together to create this exceptional estate oil.
Barton Olive Oil Company extra virgin olive oil (EVOO) is tested annually by Eurofins Analytical Laboratories, Inc. to ensure our EVOO meets international, California and USDA standards for EVOO. Each harvest is tested for moisture & volatiles, acid values, peroxide, absorbance, delta K and sensory values—and each year our EVOO is accredited and within range for EVOO standards—and with harmony balances ranging between 6.6-8 and total polyphenol values exceeding 500 mg/kg—which is excellent!
